Best Chicken Alfredo Flatbread Pizza Recipe

I've said it before and I'll say it again. I love the Aldi Flatbreads! You can make a variety of flavors and they can be a meal or an appetizer.
Also, it's a good way to utilize leftovers! We used leftover chicken Alfredo ingredients to make this meal. I love cooking this Alfredo flatbread recipe. It is a super easy and cheap dinner that goes a long way.
These flatbreads come in a pack of two. I always cook two at a time. I start by placing them on a cookie sheet and preheating the oven to 425 degrees.
Sauce
I then spread 1/3 cup of Alfredo sauce on the flatbread using a spoon or the back of a spatula. I sprinkle 1 cup of cooked chicken over the sauce. I pre-made the chicken the day before.
Chicken
I diced the chicken raw then sautéed it in avocado oil in our cast iron skillet. I love using our cast iron skillet-- it heats up much quicker and cooks much more evenly than our regular skillets. I sprinkled garlic pepper (our favorite is Garlic Pepper Rub from High Mountain Seasonings-- we get ours at Scheels).
Once the chicken was cooked through (165 degrees), I put it in my favorite kitchen tool--our ninja shredder! It is so small and powerful-- we use it almost daily and I recommend it to all my friends and family!
Vegetables
Then, I cut 1/2 cup of cherry tomatoes in half and spread them out evenly on the flatbread. You could quarter them, but I love the juicy cooked tomatoes on pizza!
I also added quartered artichoke hearts. This is totally optional! I get a jar of them at Aldi too, but they are available basically everywhere you buy groceries. I prefer the marinated ones, they are much more flavorful in my opinion!
Another optional addition would be sliced black olives! I am a big olive fan, but my husband is not, so I personally held off. But, adding black or Kalamata olives would be the perfect touch.
Cheese
Then, I sprinkled 1/3 cup of feta cheese over the my other toppings. Cheese is always the last thing I had because it helps the toppings stick to the crust.
I added 1/3 cup of mild cheddar shredded cheese and 1/4 cup of shredded mozzarella cheese to my Alfredo flatbread. I spread them out evenly for a little mixture of flavor on my flatbread.
Cooking
I place the pizza in the oven for 8-11 minutes or until the edges turn brown. After 8 minutes, I check every minute just to make sure the cheese isn't getting too brown, I love it when its super melty!
After pulling it out of the oven, it's best to let it sit for 4-5 minutes. The crust firms up so the pizza is much easier to pick up and eat. I love this crust because it's firm enough that you could eat it with one hand, but not so hard that you can't bite through it. Plus, the cheese isn't so fresh and things done fall off as easily.
You can choose to cut your pizza in rectangles or triangles. I decided on triangles this time so our toddler could eat it a bit easier, but we usually go with rectangles. Your pizza is now ready to enjoy!
I love this Alfredo Flatbread recipe because we were able to use up leftovers and everything else is something that we usually have in our pantry. Plus, it's super quick and makes a great Saturday lunch.
